  Course Description

In this course, you will learn the principles of food-borne illness etiology and transmission as well as those food-borne agents resulting in food spoilage, infections and poisonings. You will also learn sanitary, preventive, and managerial practices mandated by public health laws for food service personnel and health inspectors to ensure food safety.

Please note:  This course is required for students in CCSF's Culinary Arts Program.  A degree in the Culinary Arts from CCSF requires that students BOTH pass this course AND pass an accredited version of the Food Safety Manager Exam.

Student Learning Outcomes

  1. Describe common pathogens in food and the principles of pathogen growth and transmission.
  2. Apply the biological principles of sanitation to protect public health in the food-service business.
  3. Manipulate environmental conditions in food to control both pathogens and fermentation microbes.

Class Meetings

This is an 8-week short-term, fully online course.  Plan to spend 5-6 hours per week completing work in Canvas.  Do a little every day!

Communication Plan

  • I love hearing from my students!  Please use the Canvas inbox to email me.  You will hear from me within 24 hours, usually much sooner.   There is nothing too trivial to email me about, and I will never feel "bugged" by too many emails from you.
  • Our weekly discussions are a key component of this course.  All of them are opportunities to dive deeper into the course content and to share your experiences in the course with both myself and with other students.   I am looking forward to discussing these topics with you and learning from you as you share your experiences as well.
  • The semester goes quickly and life happens!  For that reason, it's really important to log in multiple times per week and keep up with the material.  It helps to do a little every day if possible.  Don't leave assignments until the last minute!  Please communicate with me if you know you will be absent from the online environment for more than 2-3 days, and let's work together to ensure that you can stay on track.

Dropping the Class

If you decide to discontinue this course, it is your responsibility to officially drop it to avoid getting no refund (after 10% of course length), a W symbol (after 20%), or a grade (after 60%). Please note that I am required to drop students who are not attending.  In an online course, this means that you are participating in discussions and turning in assignments.  If life happens, and you must be offline temporarily, please let me know ASAP so we can make arrangements for your continued success in my class.

Pass‐No Pass (P/NP)

You must file for the P/NP option by the date listed above. Once you decide to go for P/NP, you cannot change back to a letter grade. If you are taking this course as part of a certificate program, you can probably still take the class P/NP. Check with a counselor to be sure.

Attendance

Attending an online course is achieved by participating in the course, contributing to discussions, asking questions, proposing answers, submitting assignments, and collaborating with your peers. You'll have many opportunities to participate in the coming weeks. 

I will check in with you if I notice you are not participating and work with you to help you get back on track.  It is strongly advised that if you need to miss more than one class/homework deadline in a row, you contact me and reaffirm your interest in the course. Students who do not log in to an online class after the second week and participate in a learning activity will be dropped from the class. 

Late Policy

Please plan to submit all work before the deadline.    

In this class, we are learning about food safety.  Many of you will be responsible for keeping food safe and training others to do so.  There is no room in this class to cut corners because as you will learn, people can easily die from infectious diseases transmitted by foodborne pathogens.  If a customer becomes sick on your shift you will probably get fired and your restaurant will probably get sued.  

I understand that sometimes, there are extenuating situations that prevent you from getting your work done on time.  I still want you to complete all assignments!  Along those lines, for any late submission, there will be a 10% grade reduction for each calendar day that the work is late.  If you anticipate that there will be a problem with the deadline, please let me know in advance, as soon as possible, so that we can consider negotiating a possible solution. 

Late Discussion board posts: it is not in the best interest of the class to accept late discussion board postings or replies.  To keep the conversations going, students are expected to post their answers to the discussion board questions by Thursday and post all replies by Sunday for each module.  It throws off the rhythm of the class if students post answers or replies after the due dates and cause confusion for the rest of the class.  With this in mind, I ask that students prioritize discussion board questions as I will not accept late postings or replies.

Methods of Evaluation

Each week you will complete two "Lessons", two "Outbreaks", and two Quizzes, and participate in one class discussion.  Your grade will be based on completing these assignments as well as your performance on a midterm and a final exam.

I know that getting good grades can sometimes be stressful. To help reduce that stress and improve the likelihood of getting your best grades, allow yourself the time and space you need to do your best work. Don't procrastinate, and if you get stuck on an assignment, reach out to me or one of your peers.  I welcome your questions and I'm happy to help you think through your ideas so you can successfully complete an assignment. You know how to reach me, right? 

Tips for Success

Do a little bit every day!  Learning science is a lot like learning to play a musical instrument, or play a sport!  Practicing every day by completing lessons, reviewing your notes, and talking with me and other students in discussions are the easiest and most effective ways to learn the concepts that we cover in this class, and retain the information so that you will be a safe food handler and effective food safety manager after the course is over.

Grading Policy

Visit the “Grades” in Canvas to keep track of your grades. I grade several times per week and post grades and comments on the online Canvas grade book.  I do not "round up".  For example, if you need a "B", you must get AT LEAST 80% of the points possible.  79.999999999% is still a "C".    Don't email me at the end of the semester about this.  I will have to tell you "No" and it makes me sad.

If taking Pass/No Pass, you need at least 70% of the total class points and complete the midterm exam and the final exam to pass the class.

An “F” grade indicates that a student attended, participated, and completed the course but failed to master the course curriculum.

An “FW” grade indicates the student stopped attending a course after the “last day to withdraw” deadline and subsequently did not submit any work or participate in any exams. Please check with your counselor and financial aid advisor for possible implications of the FW grade on residency and financial aid status.
